From Sunday "Skins" Pinot Gris


2016 Pinot Gris - Orange, NSW

We picked some beautiful pinot gris from a high altitude vineyard in Orange. We then then made the wine in three different ways.

  • This one is called "skins" because we fermented the grapes in contact with the skins. Basically we pretended it was pinot noir. 
  • Another one is called "juiced" because thats basically all we did to it
  • The last "carbonic" because it was made with a process called carbonic maceration

Skins has been dubbed the 'noir de blanc'. It looks like a red wine but is made from a traditionally white wine grape. Served slightly chilled its delicate strawberry is as seductive as any Pinot Noir. 

All of the wines were made from hand picked grapes, went through spontaneous fermentation, and had no additions, no fining and with minimal filtration.
